Honoring Our Heroes

Memorial Day Weekend is around the corner! The weekend is going to be busy, full of fun activities like BBQs, getting together with friends and family, celebrating and honoring those American Heroes who have sacrificed themselves for our freedoms. Not only will we be honoring human heroes but also the animals who have served this great country as well. Mom and I are currently reading: The Dogs of War: The Courage, Love, and Loyalty of Military Working Dogs; by Lisa Rogak. This book is pretty good so far. It describes some of the history of the courageous doggies in the Military, how they’ve saved troops from enemy ambushes, brought aid to fallen soldiers, and helped track down the enemy. It’s pretty cool to learn about how us doggies have been standing together with our human companions protecting and serving the United States of America over the decades.

Memorial Day Meatloaf w/ Sweet Potato Chips

Memorial Day Meatloaf
1 lb Hamburger;
1 C brown rice (cooked);
1 C green beans (diced);
1 C carrots (diced);
1 egg;
¼ C & 2 tbsp. tomato sauce;
½ tsp. dried oregano;
½ tsp. garlic powder;
¼ C parmesan cheese (finely grated);

How To:
Preheat oven to 350o F. Combine all ingredients (reserving 2 tbsp. tomato sauce and grated parmesan cheese) thoroughly in a large mixing bowl ensuring all ingredients are evenly distributed. Divide meat mixture in half. Press each half into greased loaf pan. Top each loaf with 1 tbsp. tomato sauce and grated parmesan cheese. Bake for 1 hour. Let cool completely before slicing & serving.
