Lt. Michael Murphy

This Memorial Day I participated with Mom and the awesome peeps at CrossFit Las Cruces, in the annual Memorial Day Murph Hero Workout and fundraiser event. The Hero workout was created in honor of Lt. Michael Murphy who sacrificed his own life for his fellow soldiers of Navy Seal Team 10. The workout is a tough one consisting of a 1 mile run, 100 pull ups, 200 push ups, 300 squats, another 1 mile run; all while wearing a 20# weighted vest. Since I lack opposable thumbs I only participated in the running portions with Mom and napped while she was trudging thru the pull ups, push ups, and squats.
To help get me thru the brutal workout I fueled up with these Peanut Butter Banana Power Muffins that Mom made for me.

Peanut Butter & Banana Power Muffins

Peanut Butter Banana Power Muffins
Ingredients:
2 C Brown Rice Flour;
1 C Flaxseed Meal;
1 C Rolled Oats;
2 Tbsp. Honey;
1 Tbsp. All natural Peanut Butter;
1 egg;
2 C Water;
3 Ripe Bananas (over ripe is sweetest);
¼ tsp. Vanilla;
½ Tbsp. Baking Powder;

How To:
Preheat oven to 350oF. Mix together water, egg, honey, peanut butter, vanilla, & mashed bananas. Combine dry ingredients, rice flour, flaxseed meal, rolled oats, & baking powder. Add dry ingredients to wet ingredients and mix thoroughly. Fill lined muffin cups three quarter full with batter. Bake for 45 minutes, until golden brown.
