The other great part about summertime is the al fresco dining.
Last weekend, Mom and Dad took Butthead and I to check out another cool spot here in The LC, called Guacamole’s (3995 W Picacho Ave, Las Cruces, NM 88005 (575) 525-9115). They are an all outdoor dining place specializing hamburgers, sandwiches, chicken on a stick, and a huge selection of beer from all over the world. A very cool place with really cool peeps. The super friendly peeps brought Butthead and I a big bowl of cool water right when we got there.
Dad got the Ginormous Double Green Chile Bacon Guacamole Burger with Kettle Chips and a Kronhauer??? or something like that…I don’t really recall, all I remember was deeply gazing into the dreamy darkness of that cheeseburger and finding myself standing in a puddle of my own drool…
Mom and Dad loved the burgers, served on a light & delicious toasted bun with flavorful green chile; and the chips were served with a great salsa with the right amount of spiciness. The owners were unnecessarily apologetic that they did not have anything dog friendly on the menu and promised to have some dog biscuits or hot dogs next time. We dined under a big shade tree and just enjoyed the atmosphere and breezy summer afternoon. Guacamole’s gets a 5 PAW Walter Pupproval Rating for great food and super dog friendly peeps. Can’t wait to go back!
Here’s a Blueberry Oatmeal Cookie recipe that Mom’s been experimenting with. They turned out pretty tasty. Enjoy!
2 C Brown Rice Flour;
2 1/4 C Flaxseed Meal;
2 C Rolled Oats;
2 Tbsp. Vegetable Oil;
1 C Blueberries;
2 Tbsp. Honey;
1/2 C Applesauce;
1 1/4 C Water;
1/4 tsp. vanilla;
Preheat oven to 350oF. Combine dry ingredients in a large mixing bowl. In separate bowl, mix together wet ingredients until thoroughly blended. Add wet ingredients to dry ingredients and mix until forming a stiff dough. Knead dough until all ingredients are thoroughly distributed. Divide dough and roll out sections to a 1/4″ thickness, between pieces or parchment paper or on a floured surface. Using cookie cutter, cut out shapes and place onto parchment lined cookie sheets. Bake for 30-45 minutes or until center of cookie is firm. Leaving cookies in the oven, turn off oven and allow cookies to completely cool.
