Whew…try saying that 10 times fast!
Mom came up with these totally PAWsome portable treats for me in order to keep me loaded up on calories and energy when out hiking, backpacking, or trekking. Hope you enjoy them on your next outdoor adventure!
½ C Oatmeal;
1 C Brown Rice Flour;
½ C Quinoa (cooked);
½ C Peanut Butter;
½ tsp Baking Powder;
½ tsp Vanilla extract;
¾ C dried blueberries or cranberries (or other dog safe dried fruit but NOT RAISINS);
2/3 C Finely Chopped Pecans (or peanuts; but other nuts such as macadamia, walnut, and almonds should be avoided);
½ C Carob Chips (optional);
¼ C dried milk;
¼ C apple sauce;
Preheat oven to 350 F. Mix together rice flour, oatmeal, quinoa, baking powder, and dried milk. Mix in eggs, vanilla, applesauce, and peanut butter with hand mixer. Fold in dried berries, pecans, and carob chips. Pour mixture onto a parchment lined baking sheet forming one or two 12”x6”x1/2” loaf.
Bake at 350 F for 30 minutes. Reduce heat to 325 F and remove from oven. Allow to cool slightly. Cut loaves into 1” wide bars, lay each bar sideways (one cut side down), and bake an additional 15 minutes at 325 F until browned.
Turn off heat, leaving biscotti in oven to cool completely.
