“FANCY DINNER”

So last Friday Dad made a Fancy Dinner for Mom, just because he’s pretty awesome like that sometimes.  Mom and Dad have for many years now made what they called ‘Fancy Dinner’.  It all started many years ago (a decade and a half, actually) when they were broke college students and didn’t have a whole lot of cash to spend on fancy meals or groceries.

The Original ‘Fancy Dinner’ consists of Pigs in a Blanket (a hot dog wrapped in a Pilsbury Crescent Roll) and Macaroni & Cheese (Kraft boxed mac & cheese w/ the powdered orange colored cheese) with a glass of Carlo Rossi Paisano vino (the kind that you can buy for $6 a gallon)… Las Cruces-20130405-00252

Although, they do still on occasion revert to their old college days and make the original version of ‘Fancy Dinner’; last week Dad decided he was going to make a different ‘Fancy Dinner’ for date night.  He found a great deal on some fresh veal at the local market and made Veal Scaloppini with lemon caper sauce and served it with a with herb and butter Tri-colored Potato Gnocchi and a spring mix salad… IMG_00000274

He did pretty good huh?  I coached him of course.

Although he doesn’t like to admit it, Dad spoils me too, he cooked up some veal for me too but without the flour coating of course!  (But, don’t tell him I told you guys!)… IMG_00000299

  1. Looks like you guys really spoiled yourselves with fancy dinner! Isn’t awful how delicious that terrible powdered orange cheese is.. I always feel so guilty when I have it!
