Brrrr…the wind has been blowing since 3 am this morning, bringing with it WINTER. The past month has been exceptionally warm for this time of year, but it finally looks like the leaves are actually going come showering down off the trees. The temperatures are expected to drop to 38 degrees tonight and by Sunday they say we might get some SNOW!
That means it’s time to get out the sweaters (this picture was take last winter, but Butthead looks too funny wearing my old baby sweater I had to share this…hahaha!)…And it is a perfect time to have Mom make me up some BELLY WARMING BEEF AND WILD RICE STEW.
BELLY WARMING BEEF AND WILD RICE STEW
1 lb round steak, cubed* (organic grass fed beef is preferred);
3 large carrots, peeled & diced*;
1 large apple, cored & diced*;
2 C frozen peas*;
1 C wild rice, rinsed*;
2 C water;
2 C beef broth (low sodium, or homemade is best);
1 Tbs organic coconut oil (or vegetable oil);
*Note – for small and tiny breeds the ingredients may need to be minced either by hand or in a food processor.
Cover and bring to a boil. Once boiling, add in the wild rice, stir, cover, and simmer until rice is cooked through (approx. 30 min). Allow to cool slightly, serve warm over regular dry kibble or alone.
