Road Apples



1 lb lean hamburger (can also use ground turkey, chicken, or game meat);

1 egg;

¼ C Flax Seed Meal

1 ½ C finely diced fruit and/or veggies (carrots, sweet potato, zucchini, squash, apples);

1 Tbsp Coconut Oil;

¼ C low sodium broth or water;

How To:

Mash all ingredients (except coconut oil and broth) together well with hands.  Shape into bite size meatballs depending on breed size.  Heat coconut oil in a frying pan and brown the meatballs on all sides, insides will still be raw.  IMG_20141103_201814

Once nicely browned transfer meatballs to a shallow baking dish arranged in a single layer.  Pour approximately ¼ inch of broth to the bottom of the dish and place in the oven at 375oF for approximately 20 minutes til done.


Cook time will depend on the size of meatballs.  Allow to cool before serving.  Store leftovers sealed in an airtight container in the refrigerator.

Short cut:  skip the pan browning and put directly into the oven, increase temp to 400oF and cooking time;

Time-Saving Substitution:  use 1/3 C SoJo’s ® Dehydrated Fruit and Veggie mix (rehydrated) in place of the fresh veggies/fruit;

  1. that sounds tasty! and I’m a fan of that name, but I bet they are much better than the real road apples :o) do you know with what we could replace the flax seed meal? I have some doubts that our stores have it. (yes, we live on the wrong side of the pond lol)
