It’s Monday Peeps!

Hope you all had a fantabulous Mother’s Day weekend! I know I did. For Mother’s Day Butthead & I got Mom a cool card and new 20lb weighted vest coz’ she’s a CrossFit junkie and is planning on doing the Hero Workout known as Murph this coming Memorial Day. She & I did that workout together last year & it was a total blast, I’m hoping my paw completely heals up by then so I can do it with her and the gang at CrossFit Las Cruces again this year.

Yesterday we got to spend all day with Mom & Dad just puttering in the yard, planting flowers, napping in the sun, & chillin. Also, spent all day watching Butthead chase butterflies, birds, & their shadows all over the yard; it was really quite entertaining, he still hasn’t figured out what shadows are. I don’t plan on telling either.

This week, Mom made me this simple & delicious Ground Sirloin w/ Sweet Potato & Green Bean Pasta Salad.Ground Sirloin w/ Sweet Potato & Green Bean Pasta Salad

Ground Sirloin w/ Sweet Potato & Green Bean Pasta Salad

Ingredients:
1 lb ground sirlon;
1 large sweet potato, diced;
1 bundle fresh green beans, chopped;
½ package (approx. 8oz) brown rice pasta;

How To:
Bring a large stock pot of water to a boil, add pasta, potato, and green beans all at same time. Stir and bring back to a boil. Reduce heat slightly, and cook until pasta is al dente and potato is thoroughly cooked. Drain pasta & veggies in a strainer and rinse with cool water to stop the cooking. While waiting for pasta to cool, brown the ground sirloin in a nonstick pan. Cook until meat is thoroughly cooked, drain off any fat & allow to cool. Combine meat w/ the pasta mixture & serve.
