Today is Patriot Day, a day of remembrance of the victims and heroes of the terrorist attacks that hit the United States of America on September 11, 2001.
Although, I was not born yet Mom tells me that it was also a day that we saw American people pull together and help and shelter one another. To care about and for our neighbors and strangers alike. It was a day that we cried and mourned for and with those we did not even know. It was a day that our beloved country was attacked by terrorists and we as a people responded in support of one another without regard to race, religion, or social standings because we are Americans.
Mom tells me that on that day we all stood side by side in support of our country. We showed the strong and resilient faces of our melting pot we call the USA. Ordinary people became heroes and our brave heroes became victims. Yet, after the dust settled and the years passed we seem to have forgotten that we can be united despite our differences. In fact we’ve let our differences define our attitudes towards groups of individuals rather than our differences defining our individualism.
Today, let’s remember how our country pulled together in a time of crisis, let’s honor those brave heroes, let’s never forget that we are the USA and it is our differences that makes our country one to be proud of. So, put aside your differences in race, religion, breed, and social standings….And let’s all have cookies!
Peanut Butter & Carob Cookies
Ingredients:
3 ½ C Brown Rice Flour;
½ C Flax Seed Meal;
¾ C Rolled Oats;
1 C All-natural Peanut Butter;
½ C chopped carob chips;
1 egg;
1 C Water;
¼ C Dry Milk Powder;
How To:
Preheat oven to 350oF. Combine all dry ingredients in a large mixing bowl. Add wet ingredients and knead until thoroughly distributed. Dough will be sticky. Divide dough into quarters and rolled each quarter into a 2” diameter log. Place logs on a parchment lined baking sheet and bake for approx. 30 min or until lightly browned but not cooked through.
Remove from oven (do not turn oven off) and cut into 1/4” wide discs. Place discs flat on parchment lined cookie sheets and return to the oven for another 30 min turning them once after 15 min.
Turn off oven, leave cookies in oven to cool completely before serving. Share with your buddies, friends, neighbors, and strangers.
