THANKFUL FOR COOKIES!

Hooray!!  It’s Thanksgiving!  And Butthead and I get a whole week to spend with Mom and Dad doing cool stuff and exploring neat places!  And EATING!  My most favoritest thing there is to do!

This week in celebration of Thanksgiving, Mom made me these PAWsome Turkey Dinner MREs.  They’re called MREs because they are like having an entire turkey dinner complete with corn bread stuffing, sweet potato hot dish, and cranberry sauce all bundled up into one Meal-Ready-to-Eat (MRE)!  A totally portable Thanksgiving Dinner!IMG_20131124_143200

TURKEY DINNER MREs

Ingredients:

3 C Brown Rice Flour;

1 C Corn Meal;

½ lb ground turkey (cooked & finely crumbled);

1 sweet potato (baked & skin removed);

2 eggs;

½ C dried cranberries (minced);

1 tsp. tarragon (optional);IMG_20131124_101507

How To:

Preheat oven to 375oF.  Meanwhile, thoroughly brown the ground turkey…IMG_20131124_101216

Combine flour and corn meal in large mixing bowl.  In separate bowl mix together potato, eggs, & tarragon (or, if you forget to mix in the tarragon like Mom did here, you can mix it with an egg and brush it on the cut cookies before baking).  Mix thoroughly the wet ingredients w/ the dry.  Fold in the cooked ground turkey and cranberries.  Knead thoroughly until all ingredients are well distributed and the dough has a nice consistency.  Divide dough in half.  Between 2 sheets of parchment paper, roll dough flat to ¼ inch think and cut shapes w/ cookie cutter…IMG_20131124_112828

Bake for 20 – 45 minutes or until firm depending on the size of the cookies.  Turn off oven, but leave cookies in the oven until cooled completely (this allows the dry air in the oven to help them get good and crunchy).   Then GOBBLE them suckers up!
